  • An open employee's beverage container was observed in kitchen area, a food preparation area. Corrected.
  • Food employee observed in kitchen area, not wearing proper hair restraints, such as nets, hats.
  • Raw chicken was stored above raw beef, pork, fish in reach-in cooler on the expo-line. Corrected.
  • Observed beef and vegetable food cooling at room temperature on a tabletop by hot holding, which is not a proper cooling method.
  • Observed wall wooden shelves used in the prep area and expo area of the kitchen. Wood is unapproved material unless painted or sealed, it needs to be smooth and non-absorbent.

  • Food facility is using/offering for sale, jarred onions and peppers prepared in an unapproved private home. Corrected. Owner removed product from the bar area.
  • Observed wet wiping cloths throughout kitchen and bar areas, not being stored in sanitizer solution.
  • Two pasta sauces were held at 103/122 degrees Fahrenheit in the hot holding Baine Marie, rather than 135 degrees or above as required. Corrected within the four-hour time limit so sauces were heated to 165 degrees.
  • Cut leafy greens and sliced tomatoes were held at 48.6 degrees and 46.9 degrees in the kitchen cold holding unit, rather than 41 degrees or below as required. Corrected, within 4-hour time limit so food was returned to walk-in cooler unit at less than 41 degrees

(Emergency response inspection)

Violation:

  • Prep tables, counter table tops, and exposed food were contaminated with the fire suppression system chemicals and area is in need of cleaning.

Manager comment: A spark from an element on the electric fryer set off the fire suppression system while the inspector was at the establishment. The restaurant closed to clean everything up and then reopened. The inspector returned and did not find any violations.
